Valley Shepherd Fairmount
July 29th, 2008 | by tb |Today’s cheese selection was Valley Shepherd Fairmount from Valley Shepperd Creamery in Long Valley, New Jersey. This is a firm, mixed milk cheese that, according to Valley Shepherd’s website is “[a]ged in our cave from 8-15 months. Hard smooth pate. Dense body. Definitely a mountain cheese with pasture and fresh mountain aroma. The dense flavor packed into every bite is tough to describe.” I found the aroma to be a bit light, but it did have a fresh smell. The texture was dense and smooth with a nice feel in the mouth. The taste was a bit grassy with quite a few fruity overtones. I didn’t find it too complex, but it was a nice cheese. Based on the website, I’m keeping my eye out for more of their cheeses. Looks like my kind of cheese maker! Recommended!
