Calkins Creamery Saint Paulin

I stopped by Whole Foods for lunch to get some soup and figured I’d see if there was anything in the ends basket. Amazingly enough there was a local cheese — Calkins Creamery Saint Paulin. The creamery is located in the Upper Delaware River Valley (there is some nice background info on the farm here).
This is a Saint Paulin-style cheese that has been aged 6 months. It’s made from raw cow’s milk (Holstein’s). It has a thin, washed rind that is beige in color. The aroma is very light. The texture is semi-firm with some eyes. The flavor is very winey, with fruity notes, and slightly sharp. Overall, it is quite a complex cheese with a long, lingering finish. The wine notes were a bit overpowering, so I recommend it be eaten in small bites. Yet another local cheese maker I’ll be on the lookout for.
