Cherry Grove Farm Provolone

Tonight, to go along with dinner, I pulled out a Provolone from Cherry Grove Farm in Lawrenceville, NJ. This was one of the cheese’s I picked up in my bulk purchase from Fair Food Farmstead last week.

This provolone is a raw Jersey cow’s milk that has been aged 60 days (minimum required under FDA rules for cheese made from unpasteurized milk). It had a great butter yellow color. There was no rind, a bit oily on the outside, and a semi-soft texture. The texture was buttery with a slightly oily mouthfeel. It wasn’t salty and was just slighly fruity. It had just a bit of provolone sharpness on the finish. This cheese really needs time to come up to room temperature and open up. Once again, another fine cheese from Cherry Grove. Recommended!
