Ewe’s Dream

Ewe’s Dream is made by Otterbein Acres in Newburg, PA. It is made from raw sheep’s milk that is organic (grass-fed, hormone and antibiotic free). It is smiliar to a pecorino-toscano fresco. It almost rindless and the interior color was pale yellow. The aroma was definitely mild. The cheese has a dense texture, but is softer than a traditional pecorino romano (which tends to be drier and crumbles). It also was giving off some oil indicating it might have received an olive oil rub. The taste was barely salty, with a bit of tang and a bit of fruitness. It was a pleasant cheese that complemented a basic pasta meal as something to have on the side.
