Classic Blue Log

While visiting New York this weekend, I was around Artisinal and decided to have a quick look at the cheese counter in the Bistro. I was looking for something for a picnic later and noticed they had a few goat cheese logs that were covered in an awesome mold.
Classic Blue Log is from Westfield Farm in Massachusetts. It’s a goat’s milk log (about 4.5oz) with an exterior coated in Glaucum mold. Apparently Artisinal ages these logs for an additional two weeks, which enhances the blue mold characteristics.
This cheese was really beautiful. The mold was emerald and seaweed green, with some blues and streaks of light orange and white. The interior was slightly creamy, bordering on crumbly. The cheese was a mixture of flavors — tangy goat’s milk and sharp, peppery notes from the mold. This is quite a complex cheese. The taste buds in my mouth were all over the place. My mind was thinking goat’s milk, and the mouth was getting pepper and sharp. This really was a fascinating cheese. I really want to try some more goat’s milk cheeses given the mold treatment.
