Lazy Lady Filibuster

Honestly, there are times when someone else just captures the essence of a cheese in writing so much better than I ever will. I was at DiBruno Bros. checking out what local cheeses they had and saw Lazy Lady Farm’s Filibuster, which I had been wanting to try. Why had I been wanting to try this particular cheese? Well, here is the description from the Saxelby Cheese Summer 08 selection (seriously, if you live in NYC, support this place. If you don’t, keep wishing like I do that she’ll get her online ordering going soon. I will be visiting in person in a couple of weeks!): “This cheese stinks. Really it does. On a scale of 1 to 10, 10 being the stinkiest, Fil-A-Buster usually clocks in at around an 11. But pay no heed to it’s gamey scent; just savor the flavor! The paste is soft and spreadable, and the sticky rind imparts a complex funk, somewhere in between butter, wet bark and pine needles scattered on a forest floor. Bound in birch bark to keep it from running all over the place… and it just barely does the job.”
Now, how do you NOT want to try this cheese??? “…somewhere between butter, wet bark and pine needles scattered on a forest floor.” Simply amazing (both the cheese and the description). So, I completely agree with this description. It was the funkiest cheese I have yet tasted. It was one of the funkiest looking cheeses. It was pure funk, but in that P-Funk way, it had its own groove that you couldn’t resist.
