Telford Tomme

I picked up a Telford Tomme at Whole Foods at lunch. Telford Tomme is made by Hendrick Farms. It is a washed rind (washed with black cherry and whey), semi-soft unpasteurized cow’s-milk cheese. The interior was firm, almost flaky. The taste was a bit sweet, with small crystals, low brininess, and slight tartness. This was a 2nd place winner at the 2006 American Cheese Society competition. This was a really nice cheese with good flavor.
