PA Noble

Yet another interesting cheese discovered at the Fair Farm Foodstand from a dairy I hadn’t yet tried. Pennsylvania (PA) Noble is made by Green Valley Creamery in Lancaster, PA. The cheese is made solely from organic cow’s milk.
The cheese is semi-firm with an ever so thin, white-colored natural rind. PA Noble is aged for 7 months. The interior color is a gold color (which makes a nice contrast with the white rind).
The taste of PA Noble reminded me of an medium-aged Cheddar (sharpish, slight tang, hints of fruit and nuts, like hazelnuts). It is based on a Cheddar recipe, however, it’s not brined, so it doesn’t have the traditional saltiness associated with Cheddars. The texture was very smooth and slightly buttery, which I also don’t equate with aged Cheddars. This was a very good cheese, something I’d serve on a cheese plate as it’s a different slant on an aged Cheddar.
