Ticklemore

The last cheese I purchased from La Fromagerie was Ticklemore, a pasteurised goats milk cheese made on Sharpham Estate near Totnes, Devon. Apparently this cheese was made by the Ticklemore Cheese Company which recently sold this cheese to Sharpham and is being made by one of their former cheesemakers.
The shape is ovalish. It has a thick, whitish natural rind. The interior is bright white with a good amount of eyes, which becomes off-white near the rind. The paste is semi-firm and slightly flaky.
There is minimal aroma. The taste, however, is fresh, with floral tones. The cheese was slightly salty with a mild goat milk tang that had a faint bit of sweetness on the end. This cheese’s texture and mold pattern on the rind reminded me of a goats milk Firm Ricotta, but the taste, while mild, was quite complex. This would be a good goats milk cheese for people adverse to goats milk. I highly recommend it.
