Misty Morning

I stopped by the local Whole Foods to pick up some items for a buffet dinner I was doing with family (since they had to work on Saturday night). I was checking to see if there were any new local cheeses and they had Calkins Creamery Misty Morning, which I hadn’t yet tried and was a style of cheese I knew the family would enjoy.
Misty Morning is modeled after a Welsh Cheddar. It had a familiar look and aroma when I opened the wrapping. It has a natural rind, that was quite thin but firm with a wonderful grey and white mottle. The interior was just slightly off-white with some eyes.
The aroma was mild with a familiar Cheddar sharpness and brininess. The texture was slightly crumbly and a bit dry, but not too dry. The taste was quite mild, which made you try to understand it a bit more. After a while there was some earthy notes in there to go with the mild saltiness. Overall, this was a very pleasant cheese that would appeal to a wide variety of people and would be very popular on a holiday cheese plate!
