Haystack Peak
May 25th, 2009 | by tb |The second cheese I had at Tria was Haystack Peak made by Haystack Mountain Goat Dairy in Niwot, Colorado. Another first, a cheese from Colorado!
Haystack Peak is a bloomy mold ripened goat’s cheese. It ripened from outside-in creating a 1/4″ inch layer of gooey, runny goodness before the slightly chalky, typical aged goat cheese, interior. It had a very clean taste, not very tart or tangy, but more fresh tasting. Even the ripened edge only faintly smelled of mushrooms.
I was quite impressed by this cheese. It paired perfectly with the Berlinerweisse.
