Shellbark Hollow Farm Fresh Goat Cheese

A beautiful Sunday afternoon for a walk in Philadelphia, which means a trip to DiBruno Bros. to check out the cheese. Sitting there on a marble slab, looking lonely, but very sexy, was a single remaining round of fresh goat cheese from Shellbark Hollow Farm in West Chester, PA. I tried to ignore it, but I finally cracked and I’m very happy that I did.
I haven’t yet tried any cheeses from Shellbark. I’m a sucker for any fresh goat cheese rounds and this cheese did not disappoint. This cheese was subtle, not in your face. It lacked the punchy goat milk tang, and instead had soft, pleasant flora aromas, citrus flavors, and a slight sweetness. It had a very clean, very fresh taste. The flavors were well balanced and no single aspect overwhelmed. This was a beautiful cheese. It was on par with some of the fresh French rounds I bought at La Fromagerie in London. This was just an awesome cheese!
