Wallaby

I was in the area of Reading Terminal and decided to stop by Fair Food Farmstand. There were several new cheeses from creameries I hadn’t tried. Wallaby is made by Keswick Creamery near Newburg, PA. Wallaby is made in a style similar to “… Monterey jack-style cheese that we allow to develop a wild-mold rind in our aging room. It retains the creaminess of jack but has a stronger flavor.” The cheese is made from raw Jersey milk and aged 60 days (for legal reasons of course).
I found the Wallaby to be an interesting cheese. It has a strong aroma and flavor. Monterey jack came to mind as I tried it. The paste was slightly creamy with a slightly salty taste and a characterstic sharp ‘Jack tang that lasted quite a while. I think this would make an awesome grilled cheese made with a hearty wheat bread.
