Yet again, another Sunday, another convenient opportunity. I just happen to be in the vicinity of DiBruno Bros., so I figured it would be worth a quick trip to check out the goods. I quickly noticed something unusual and thought it might just be the elusive Bi-Partisan from Lazy Lady Farms, and it was! I had been really wanting to try this cheese for a while.

Laini Fondiller is great at making cheese and then giving them wonderful names. Bi-Partisan is pretty aptly named. It starts out as a mold-ripened raw-milk goat cheese that is allowed to develop a bloomy rind, which forms the core of the cheese. Around this core a raw cow’s milk cheese is formed. The exterior cheese is brine washed, giving it a wonderful, funky rind.

At room temp, this cheese is marvelous. The goat round remains firm and has a traditional tangy taste and chalky, crumbly texture. However, the magic moment occurs when you cut through the cheese and you get a creamy, buttery texture from the cow’s milk along with the tang of the goat. It’s like tang, citrus, mushrooms, and earth with creamy and chalky all happening at once! It’s definitely not your run-of-the-mill cheese style and I could see some purists scoffing, but it’s definitely a unique experience that I thoroughly enjoyed! Lazy Lady again delivers a wonderful cheese.
