Fat Cat is Birchrun Hill Farm’s blue cheese base without the addition of mold. It is a natural rind cheese made from raw cow’s milk, aged 80+ days. Birchrun’s cheeses are from cow’s that are grass-fed, hormone, as well as antibiotic, free. I always like to re-iterate that great point about Birchrun and so many of the craft cheese makers.
Fat Cat has a sharp tang with a rich, buttery taste. Lots of eyes in the paste, which is soft at the perimeter due to ripening and firmer, almost turning crumbly in the center. A very nice cheese and very interesting to compare against Birchrun Blue.
