Mons-Cazelle de Saint Affrique

Mons-Cazelle de Saint Affrique is a wonderful sheep’s milk cheese from the Saint Affrique area in Southern France. The above link to the Whole Foods blog and this description from Murray’s provide great backgrounds on the history of this cheese.
On to the important bits. The aroma is big time barnyard! I mean, put your nose to the rind, close your eyes, and you would swear you are in the middle of a barn, getting a heady rush of manure and earth smells, but not in an unpleasant way. The taste is rather subdued. It’s slightly sharp with faint straw and mushroom aromas after the barnyard aromas pass. This is not one of those cheeses you would put out on a cheese plate with cheese neophytes nearby. This is serious stuff, so save it, and savor it, for yourself! Highly recommended!
