Blue Suede Moo

Keswick Creamery’s Blue Suede Moo is a wonderful blue cheese with a terrific name. It is made from raw cow’s milk and has a beautiful interior and a wonderfully cragy, mottled rind. The interior has a light gray to beige paste with lots of variation in the mold colors ranging from algae and jade green to royal blue. The aroma is subtle, a bit sweet with some earthiness. Blue Suede Moo has a pleasant texture, that is soft, almost butter-like. The taste though – wow, what a very mellow blue. It’s not too spicy or sharp or salty, but when you hit a vein you get a nice bit of pepper spiciness. This was a really nice blue cheese that I wouldn’t hesitate to serve to novices and gourmands alike. I could also see this making an awesome dressing where it wouldn’t overpower simple field greens. Great stuff!
