Green Meadow Farm Raw Milk Cheddar

This Raw Milk Cheddar is from Green Meadow Farm in Gap, PA. It’s made from raw milk from Holstein cows and is aged for a year. There isn’t much information about this farm, and as their website indicates that they focus on specialty herbs and vegetables for restaurants in theĀ Philadelphia and Lancaster area, I wasn’t able to confirm if they are making their own cheese or selling on behalf of one of their neighbors.
Since the block I got came from Fair Food Farmstand, there was no rind, so I’m not sure if it was a waxed or natural rind. There wasn’t much aroma, just a slight tang smell. The paste was semi-firm, with a few eyeholes and an almost snow white color. This cheddar was quite tasty! It wasn’t anything fancy, just a straight ahead aged Cheddar. It had some garlic and green onion tastes, with a pleasant tang. This Cheddar was really good on a grilled cheese and tomato sandwich.
