Blue Heron Farms Feta

blue-heron-fetaAt the Bayou City Farmers Market in Houston, Blue Heron Farms sells some wonderful goats milk cheeses. My parents raved about the Feta, so naturally I had to see what made this cheese so special.

This Feta is not brined, just salted and aged, so it doesn’t taste like traditional Greek Feta. The flavor of the goats milk comes through in the cheese. It’s not salty and has a very smooth paste. It is very rich tasting. I really could eat a lot of this Feta at one sitting, it’s that good!

On a side note, Blue Heron Farms also makes “spreads” with their Chevre as a base. I got some of the Breakfast Spread, which is “[f]resh chevre slightly sweetened with brown sugar and studded with chopped, dried apricot and crystallized ginger.” This was simply divine. I had some on a bagel, and honestly, could have done without the bagel as it just got in the way.
