Blueberry Havarti

In the spirit of trying something local (which is all relative when dealing with Texas), I took a risk and picked up some Brazos Valley Cheese Co. Blueberry Havarti (the first Texas cheese on The Cheese Blog!). The cheese is made from raw cow’s milk that is aged for 2 to 3 months and is lightly smoked. The cheese is semi-firm, with a natural rind. It has a smooth, buttery paste that is slightly oily.
The taste is tangy, a bit sharp, with a very slight blueberry aroma. The blueberries also contribute a very slight sweetness, but it’s nothing like you would expect from seeing the number of blueberries throughout the cheese. I was actually surprised that the cheese had a strong Havarti taste and the blueberries added some character, but didn’t come close to overwhelming the taste of the cheese. This was a very interesting cheese. It certainly was not what I was expecting and that is a good thing!
