Shropshire Blue

shropshire-blueIn the spirit of my upcoming move to Old Blighty, and the fact my father loves almost any type of blue cheese, we picked up some Shropshire Blue while out shopping. Shropsire Blue is made by the Colston Bassett and District Dairy in Nottinghamshire from pasteurized cow’s milk. According to Neal’s Yard, the cheese is basically Stilton with the addition of annatto to color the paste.

There is little aroma to the Shropshire, except for maybe a hint of bread or yeast. It has a mottled, natural rind. The texture is quite crumbly with a buttery texture. Overall, this is a a mellow Blue. It is not overly salty or briny and has a nice flavor. It is tangy and peppery when hitting the blue-green-grey veins of mold. This is really a lovely cheese that has great visual presentation on a cheese board and is very accessible for a blue cheese.
