Caprini Tartufo

I was near La Fromagerie recently and decided to stop in and see what looked good. They had some interesting Caprini Tarfufo rounds. The rounds smelled “interesting” (goat’s milk and black truffles?) Always up for a challenge, I picked up a couple.
The Caprini’s are hand made from pasteurized goat’s milk and come from the northwestern region of Piemonte in Italy. The cheeses are quite fresh. They have a lovely pale white exterior. The aroma’s are earthy due to the truffle shavings on top. The interior is ever slightly crumbly, but with a moist paste. The flavor is slightly tangy with a hint of sweetness, but near the top, the flavor takes on more of the truffle essence, so the aroma mixed with the goat cheese flavors creates a very rich-tasting experience. Not too decadent, but an interesting combination of fresh truffles and goat cheese.
