Kidderton Ash

Kidderton-AshOne of the changes that I’ve noticed living in England is the increasing quality of British cheeses being carried by M&S, Tesco, Sainsbury, etc. As part of this blog, I’m going see which British food chains stock quality, regional cheeses. Kidderton Ash is one of those. I found this in M&S, which so far, based on my qualitative assessment, seems to have a serious lead over the other food chains in terms of cheese varieties and focus on quality producers.

Ravens Oak Dairy, in Cheshire, makes Kidderton Ash, which is a goats milk cheese in a log shape covered with vegetable ash and a white, bloomy rind. The interior is slightly chalky in the center and become more gooey near the rind (ripening outside in). With the thickish rind, there is a satisfying dimension of snap, then butter, then chalky smooth textures. The taste is typical goat cheese towards the center and slightly buttery and nutty (toasted hazelnuts) near the rind. Overall, a really nice cheese that has both a wonderful texture and flavor.
