Monocacy Ash

Monocacy Ash is made by the Cherry Glen Goat Cheese Company in Boyd, MD. I’m becoming a sucker for ash coated cheeses.
Monocacy Ash is goats milk cheese that has an ash coating as well as an ash line through the middle of the cheese. This was a really, really nice goat cheese. Visually it was very pretty due to the ash coating with the bloomy rind covering the ash. The texture was slightly chalky, with a past that looks like it would crumble, but held together with a nice bit of smoothness.
Taste-wise, it has a typical goat tang, but it is quite restrained and not overwhelming. Where this cheese shines is after the initial tang. It has a wonderful citrusy lemon taste throughout that ends with a very clean and fresh finish. Overall, a real surprise. This was a great cheese with wonderful visual presentation. It would be a real winner as the goat cheese on a cheese board.
