selles-sur-cherYet another diversion from British and other UK cheeses. Selles-sur-Cher is an AOC-protected (one of the first), unpasteurized goats milk cheese made in the commune of Selles-sur-Cher, in the Loir-et-Cher region of France. The cheese is sold in small discs that have been coated in ash and then ripened between 10 and 30 days. Visually, this gives the cheese a very interesting exterior coloration due to the black-blue ash and the white, bloomy rind.

The interior is snow white and the paste is quite creamy, depending on the ripeness of the cheese. The taste is crisp and fresh, with typical goats milk cheese flavors. There is a slight taste of citrus and near the rind a hint of earthiness. A very pleasant cheese. Nothing earth shattering, just an overall nice goats milk cheese, which should be readily available in both Europe and the States.
