At the Bayou City Farmers Market in Houston, Blue Heron Farms sells some wonderful goats milk cheeses. My parents raved about the Feta, so naturally I had to see what made this cheese so special.
This Feta is not brined, just salted and aged, so it doesn't taste like traditional Greek ...
