Yet another interesting cheese discovered at the Fair Farm Foodstand from a dairy I hadn't yet tried. Pennsylvania (PA) Noble is made by Green Valley Creamery in Lancaster, PA. The cheese is made solely from organic cow's milk.

I picked up Calkin's Creamery Smoke Signal the last time I was in the Fair Food Farmstand stall at Reading Terminal. Smoke Signal is Calkin's Gouda that is cold smoked using Pocono & Catskill Applewood.
