Fat Cat is Birchrun Hill Farm's blue cheese base without the addition of mold. It is a natural rind cheese made from raw cow’s milk, aged 80+ days. Birchrun's cheeses are from cow's that are grass-fed, hormone, as well as antibiotic, free. I always like to re-iterate that great point ...

Another new farm, another new cheese. Brabander is made by Fallsdale Farm in Tyler Hill, PA. It's all natural and made from raw cow's milk. One of the striking features of this cheese was the terrific, craggy washed-rind. It gave the cheese a lot of "character."

Redmond Cheddar is produced by 5 Spoke Creamery located in Westchester, NY. It is a raw milk cheese that comes from their grass-fed herd of Holstein cows. The milk is also pesticide and hormone free, and kosher too!
